Summer Fruit Tart (Vegan)

I love summer fruit and berries in general. Who doesn’t? So I decided to honour them in a beautiful, refreshing recipe in the form of a summer fruit tart. It is a vegan recipe, believe it or not!

I also don’t like faffing about in the kitchen too much so I love when I can use few ingredients and create something amazing.

You will have no trouble making this recipe, because it is:

  •  super simple
  • takes very little time
  • even kids can participate (specially in the spooning into the mould and decorating)

This recipe is also vegan. dairy-free, fuss free refined sugar free. All you need is a food processor and a tart mould with a removable bottom. So you can push the tart out by pressing on the bottom on the tin.

Instructions
  1. Blend the crust ingredients in a food processor, scrapping the sides every now and again until it forms a fine mixture.
  2. Spoon the mixture into a tart mould and use your wet hands to form the sides. Even it all out with a spoon.
  3. Place in the freezer to chill while you make the filling.
  4. Add the tofu first in the food processor and blend until creamy.
  5. Add the coconut yoghurt and flavours and mix well until smooth. Should take very little time.
  6. Take the tart out of the freezer and pour the filling in, evening it out.
  7. Place the tart in the freezer without decorating until you wash and cut your fruit ready to decorate.
  8. Use berries, mint, basil and lemon zest to decorate.
  9. Ideally, leave in the fridge for a few hours to firm up before you serve.
Recipe Notes

The more it stays in the fridge the better it firms up.
To firm up the filling faster you can optionally use agar agar. Follow the instructions on the pack.
