Simple Roasted Vegetables

If you put a bowl of candy and a tray of simple roasted vegetables in front of me, I will 100% choose the veggies. I am a savoury-food kinda girl, with an occasional side treat and roasted veggies are my favourite! If you learn this simple combination of seasoning, you will crave them too.

  1. Wash, peel and chop your veggies
  2. Mix them in a bowl with olive oil, paprika, salt and pepper. You can also add miso paste, or liquid aminos or tamari sauce for extra flavour.
  3. Lay out on a tray and cook for 20-30 minutes, until the sweet potatoes and carrots are cooked through. (the onions and courgettes will cook first so you may want to take them out first)
