Peaches and Cream Vegan Cake

I don’t bake a lot, but when I do, I make sure I only share with you my success stories! I love classic combinations and I couldn’t help myself trying a peaches and cream vegan cake recipe. It’s all very simple and easy to recreate!

You’ll love this cake because it requires few ingredients, it’s easy to combine and bake and it’s literally beginner level stuff.

Instructions
  1. Preheat the oven at 180 degrees Celsius and grease a non-stick cake tin.
  2. In a bowl sift the flour, baking powder, bicarbonate of soda and add the sugar, salt and lemon zest too. Mix well.
  3. Separately, combine the oil, yoghurt, vanilla extract and the melted vegan butter.
  4. Incorporate the liquid ingredients slowly into the dry ones. Once combined, add the lemon juice and mix well.
  5. Pour the mixture into the tin and bake in the oven for 30-40 minutes or until a skewer inserted into the centre of the cake comes out clean.
  6. Once baked through, let cool completely before removing it from the tin and decorating.
  7. Add generous amounts of coconut cream or yoghurt and fresh peaches.
Recipe Notes

TIP: for the peaches not to oxidise, brush them with glucose. (you can find it in any supermarket in the baking isle)
