This is a dish inspired by my Eastern European roots. You would traditionally add eggs too but I decided to keep it plantbased this time. It’s literally the easiest dish, which goes perfectly with spring, leafy salads and stews. You need only 5 ingredients to make this potato, olives and red onion salad.
