New Potatoes, Olives and Red Onion Salad

This is a dish inspired by my Eastern European roots. You would traditionally add eggs too but I decided to keep it plantbased this time. It’s literally the easiest dish, which goes perfectly with spring, leafy salads and stews. You need only 5 ingredients to make this potato, olives and red onion salad.

One of the key ingredients for this dish is apple cider vinegar. The whole balance of sour, salty and earthy comes from using this versatile superfood. Here’s why I love ACV:

Instructions
  1. Boil the potatoes until soft.
  2. Finely slice the onion into thin slices
  3. Cut the cooled potatoes in halves or quarters and mix well with the rest of the ingredients until you get the right balance of sour and salty. Don't be shy to use a lot of apple cider vinegar!
  4. Sprinkle lots of dill on top
