Maple Syrup Buckwheat Pancakes (VG, GF, WF)

Another day, another serving of maple syrup buckwheat pancakes! I wish. But seriously, these pancakes are amazing, gluten- and wheat-free AND vegan! Packed with nutrients, easy on your digestive system and easy to make.

Instructions
  1. Mix all ingredients in a blender until smooth and thick. Add a little bit more milk if too thick or
  2. Using a non-stick pan ONLY, drizzle a tiny bit of coconut oil and heat it up.
  3. Pour equal amounts of batter into the pan
  4. Wait till the surface starts bubbling up (about 1-2 mins) and carefully scrape the sides to turn the pancakes
  5. Cook for another 30sec-1min on the other side
  6. Serve with maple syrup, berries or other toppings of your choice
