3-Ingredient Coconut Rice Pudding

This could be the easiest dessert you’ll ever make! If you haven’t tried rice pudding, this coconut milk version is creamier, tastier and packs extra nutrients for you. You know I love rice and I am not afraid of carbs! We need them all to have energy, take care of our gut and make sure we get a variety of foods in every day.

As I was writing in one of my risotto recipes, rice is a great nutrient. It is packed full of vitamins and minerals and provides an excellent source of vitamin E, B vitamins (thiamin, niacin) and potassium. Each cup of steamed or boiled rice has 242 calories and less than 0.5 gram of fat. It has 4 grams of protein.

I prefer it to many grains due to its soothing effect on my sensitive stomach.

  1. Rinse the rice and add to a pan with the coconut milk and sugar
  2. Stir frequently so that it doesn't stick to the pan and cook on low heat for 20 minutes or until the rice is cooked.
  3. You may need to add a little more water if the rice absorbs all liquid and isn't yet cooked. Taste it as you go along.
Recipe Notes

Serve with stewed berries, by putting fresh and frozen berries in a ban with a splash of water and a teaspoon of sugar. Simmer for 10-15minutes until the liquid thickens slightly.
